Fabulous Fall Recipe!

Happy First Day of Autumn!

To help you celebrate, I want to pass along an absolutely fabulous recipe that was shown to me as a challenge in my baking skills.  I will tell you now, it was not a challenge, but my KitchenAid was handy 🙂

Pumpkin Cheesecake Snickerdoodles

Follow the recipe to a “T” and you can’t go wrong!

Helpful Tip:  I would create 1 pan of cookies at a time and place the dough and filling back in the fridge between baking, otherwise it warms and gets too sticky to handle.

My batch yielded 18 very large cookies 🙂   And for someone who doesn’t usually like pumpkin anything, there were fabulous!   My second batch I made with a little more filling on the inside.

This recipe now has me thinking of using this recipe without the pumpkin spices to make raspberry or strawberry cheesecake snicker-doodles….or possibly a chocolate cookie with caramel cream filling :)….and of course I will figure a way to make this a cupcake 🙂
